Looking for an incredible, dense, non-dry bread recipe? This zucchini bread recipe is a go-to for me! When zucchini is in season, I go crazy freezing my 2 cups of grated zucchini so that I can make this recipe. What is even better is that you can not only freeze the grated zucchini, but you can also freeze the zucchini bread because this recipe makes 2 large loaves. Bring it to a potluck, a bridal or baby shower, and it will be gone in no time!
Zucchini Bread {Print Recipe}
- 3 eggs
- 1 t. baking soda
- 1 t. vanilla
- 1 t. cinnamon
- 2 c. sugar
- 3 c. flour
- 1 c. Crisco oil
- 1 t. salt
- 2 c. zucchini, grated
- 1/2 c. nuts, chopped (optional)
Directions:
1. Mix all ingredients except zucchini and nuts.
2. Stir in zucchini and nuts last.
3. Put in greased bread pans and bake at 350 degrees for 1 hour.
They should come out looking like this:
To remove from pan, use a spatula and run along the edges of the bread and then slide spatula underneath bread and it SHOULD come out in one piece. Wrap and freeze!
