Healthy Zucchini Chocolate Chip Brownies
Since we have decided to eat healthier, one of the things I STILL struggle with are sweets. I didn’t always consider myself to have a sweet tooth, though my teeth always seem to like sweets if they are available! And that is the exact problem. If we have leftover cookies, bars, or cake from a youth group event, you can sure bet that they will make their way into my mouth!
Sweets are something that are typically easily accessible. A cookie from the cookie jar. A bar from a pan. A handful of a mix. A slice of cake. It doesn’t take any preparation, except the salivating your mouth does when it knows what goodness it is going to be filled with. At least that is what happens to me – I don’t know about you…
In other words, sweets are something we struggle with. If they are in our home, we eat them. When they are not, we have an occasional craving (maybe that is a sweet tooth, after all). So in hopes of eating healthier, I have tried various recipes that are labeled “healthy”, but have honestly not been completely satisfied because of the lack in taste.
Until I found this recipe from The Texanerin. I have adapted it a bit to fit more of our choices in healthy eating, but regardless, these brownies are INCREDIBLE! They have a cake-like consistency, but are 100% whole grain! Honestly, you would never guess it. They do have sugar, but you can also make it as healthy as you want in that category too. I have made 2 pans of them and I have eaten almost all of both. Yes, I now have to practice portion control because these are addicting. I suppose that is step 2 in eating healthier…
After having a garden that had a very productive zucchini crop, I was able to freeze a bunch of shredded zucchini, that I am now saving for this recipe. Needless to say, the zucchini will not be going to waste! You would never guess that there is zucchini in these brownies. Take my word for it!
Healthy Zucchini Chocolate Chip Brownies {Print Recipe}
Ingredients:
- 2 eggs
- 1 T. vanilla extract
- 3/4 c. sugar (I used pure cane sugar)
- 1/4 c. unsweetened applesauce
- 1 c. whole wheat flour
- 1/2 c. cocoa
- 1 1/2 t. baking soda
- 1/4 t. salt
- 2 c. shredded zucchini
- 1 c. semi-sweet chocolate chips (more to sprinkle on top if desired and can use dark chocolate chips as well)
