Freezer meals – I can’t get enough of them! I have always wanted to try a spinach lasagna roll. It sounds fancy, but simple at the same time. I figure anything with spinach is tasty, right? Then when I figured this was a freezable meal, I knew this was something I had to try! Pasta is always a hit in our home as it is cheap, easy, and tasty. Do we indulge in pasta every night? No, but when we find a good pasta recipe, we stick with it. Give this EASY recipe a try!
In order to freeze this meal, make the rollups, but do not back. Just place sauce in bottom of pan, put rollups in pan, cover, and freeze.
Ingredients:
- 9 lasagna noodles
- 10 oz. frozen spinach, thawed and drained)
- 15 oz. ricotta cheese
- 1 egg
- 1 t. parsley
- Salt and pepper to taste
- 1 (28 oz.) jar pasta sauce
- 2 c. mozzarella cheese, divided
Directions:
1. Cook lasagna noodles and drain.
2. Lay lasagna noodles on aluminum foil.
3. Mix spinach, ricotta cheese, egg, parsley flakes, salt, pepper, and 1/2 c. mozzarella cheese.
4. Put 1/3 cup of mixture on center of each lasagna noodle and spread.
5. Roll each end towards the center. Then roll again.
6. Pour 3/4 c. of pasta sauce in bottom of dish and spread.
7. Put rolls into dish and cover with rest of sauce.
8. Sprinkle with the rest of mozzarella cheese.
9. Cover with foil and bake at 350 degrees for 40 minutes.
