Texas Caviar Goodness
In an attempt to eat healthier in our home, I have been looking through my cookbooks and online for different “wholesome” recipes. We are big snackers in our home. At night we usually grab a snack and during the day, I have a hard time not eating a snack at around 3:00. It’s so easy to grab something unhealthy (if it’s leftover from an event), so I am learning that I need to make healthier snacks so that I actually eat and choose to eat them.
One snack I love is texas caviar. First of all, the thought of eating protein, fiber, and veggies all in one, makes it a snack worth snacking on. If you have any healthy snack ideas, I’d love to hear about them!
Texas Caviar {Print Recipe}
1 c. celery, finely chopped
1 c. green peppers, chopped
1/2 c. red pepper, chopped
1/2 c. yellow pepper, chopped
1 can black beans
1 can pinto beans
1 can white corn
Marinade:
3/4 c. cider vinegar
1/2 c. olive oil
1 c. sugar
1 t. salt
1/2 t. pepper
1. Drain black beans, pinto beans, and corn.
2. In large bowl, mix celery, peppers, beans, and corn.
3. Heat marinade ingredients to a boil to dissolve sugar and let cool
4. Pour marinade over mixture.
5. Refrigerate
6. Drain off liquid and serve.
**Notes: I used less than half the sugar to make it healthier. You probably could do completely without the sugar. I also use Simply Nature Organic chips from Aldi (absolutely delicious!)
