EASY Avocado Pesto Recipe!
Pesto is a new concept for me. I have never made it before, but since I have to watch what I eat for a few weeks, I decided to try a few new HEALTHY recipes. One of them, being PESTO. I have always seen recipes for pestos and thought “no way, that’s not really me.” Little did I know that I would actually enjoy making AND eating it!
This is such a SIMPLE recipe that takes just minutes to make and tastes oh so good!
Avocado Pesto {Print Recipe}
Ingredients:
- 1 avocado
- 1 c. fresh basil (can used dried – amount according to taste)
- 1/8 t. garlic powder
- 1/4 c. pine nuts
- 1/2 t. olive oil
- Dash of sea salt
Directions:
1. Mix all ingredients together in a blender or food processor.
2. Serve with pasta.
**Note: I also threw some grilled chicken in the mix.
