Tomato Basil Bisque with Tortellini Soup
We are a soup kind of family. On those cold winter days, soup is always a way to my husband’s heart. As much as my husband is not a fan of tomato soup, I decided to be a little selfish and make a tomato-base soup, more for myself. I asked him if he wanted me to make a different soup for him, but he said he would give this one a try. Not only did he enjoy it, but he went up for seconds! So whether you are a tomato soup fan or not, this one is a must try. Warning: this soup if filling and very satisfying!
Tomato Basil Bisque with Tortellini {Print Recipe}
Ingredients:
- 12 oz. tortellini
- 1 (29 oz.) can tomato sauce
- 1 can diced tomatoes
- 4 garlic cloves, minced
- 2 t. salt
- 1 t. pepper
- 2 c. chicken broth
- 1 (6 oz.) can tomato paste
- Pinch of red pepper flakes
- 2 T. sugar
- 4 c. milk
- 1 c. half and half
- 1 T. dried basil
Directions:
1. Cook tortellini in boiling water and drain.
2. Place tomato sauce, diced tomatoes, garlic, salt, and pepper in large stockpot and simmer 5 minutes.
3. Add chicken broth, tomato paste, red pepper flakes, sugar, milk, half and half, basil, and tortellini.
4. Heat until JUST hot.
5. Garnish with parmesan and basil.
